Best way to use ripe bananas
This recipe for Chocolate Chip Banana Bars is my favorite way to use those pesky ripe bananas. Bake a batch, cut them into squares and freeze individually for when you’re on the go!
These yummy treats have been a staple in my house and have made them numerous times! The best part, this recipe is interchangeabl. For instance, I love using whole wheat flour to make them more filling. In additon, one of my favorite versions of this recipe is the batch I make with Tigernut flour. I know this is a less common baking flour, but the texture is crazy good!
The best known trick is to ripen bananas in a paper bag and store in a dark dry place, like a pantry. If you have more time, add an apple or onion to the paper bag with the bananas. Typically, I leave the bananas like this for a full day, then proceed with the Chocolate Chip Banana Bread Bar recipe.
Chocolate Chip Banana Bar recipe ingredients
Here’s what you need to make my Chocolate Chip Banana Bread Bars:
4-5 ripe bananas { about 1 + 2/3 cups }
-3/4 cup coconut sugar
-1/4 cup oil { I use coconut oil }
-1/4 cup milk { I used cashew milk }
-2 eggs or flax eggs
-1 + 3/4 cup flour { I used Spelt flour, but please feel free to use any flour on hand}
-1 tsp baking powder
-1/2 tsp pink salt
-1 tsp cinnamon
-1 cup chocolate chips divided I used @lilys_sweets_chocolate }
How to make Chocolate Chip Banana Bread Bars
1 – Heat oven to 350, Spray a large baking pan with @chosenfoods avocado oil spray.
2 – Peel bananas and mash or blend { I quickly blended in a vitamix } then add mixture to a bowl.
3 – Stir in coconut sugar, coconut oil, milk and eggs to the banana mixture until combined.
4 – Add all dry ingredients into another bowl and stir to combine. Slowly add in the dry ingredients into the wet and whisk or use a hand mixer.
5 – Fold in 1/2 the chocolate chips. Spread the batter into the prepared pan and sprinkle remaining chips on top.
6 – Bake 20-25 minutes. Cool completely and cut into squares. DEVOUR!
I like to make a batch, then cool, cut and freeze in individual baggies. They make a wonderful snack, breakfast or dessert and perfect for on-the-go.
Tips for making the best banana bars
Use super ripe bananas: The riper the better! This is what makes them super, moist.
Be sure to use extra chocolate chips: This is a no brainer! Sprinkle a handful of chocolate chips before sticking the pan into the oven. Use good judgment on the amount, and don’t be stingy!

Instructions
Heat oven to 350. Grease a large baking dish.
Peel bananas and mash or blend { I quickly blended in a vitamix } then add mixture to a bowl.
Stir in coconut sugar, coconut oil, milk and eggs to the banana mixture until combined.
Add all dry ingredients into another bowl and stir to combine. Slowly add in the dry ingredients into the wet and whisk or use a hand mixer.
Fold in 1/2 the chocolate chips. Spread the batter into the prepared pan and sprinkle remaining chips on top.
Bake 20-25 minutes. Check to see if it’s cooked through by inserting a toothpick in the center to see if it comes out clean. Cool completely and cut into square.
Notes
Please note that you can use any flour of choice. I have tried whole wheat, and tiger nut flour and they worked so well. I have not tried grain-free flour such as almond flour.
