Spicy Jalapeño Buffalo Meatballs

Hey, October!! You’re finally here!

 

I’m excited about anything and everything pumpkin spice, sweater weather, and cozy Fall meals!! 

 

Kicking the month off with these fluffy, Spicy Jalapeno Buffalo meatballs. I love these because they are so versatile AND they are perfect for meal prep if you are into that kind of thing. Make a big batch at the beginning of the week, or freeze them to use later! I currently have a stash of them in my freezer just waiting to be used.

 

 

The options are endless.

 

1) Serve them your favorite pasta noodles and marinara sauce.

 

2) Spaghetti squash, zucchini noodles for a low carb option.

 

3) Add to a nourishing bowl of soup.

 

4) Mix in a Buddha bowl, my favorite.

 

 

 

 

Every ingredient adds so much flavor to these meatballs.

 

  • Ground buffalo is much leaner than regular beef or even turkey, and I personally love the flavor.

 

  • Zubi’s Crema de Jalapeno is my favorite ingredient in these by far! Add so much flavor and spice.

 

  • Plain yogurt of choice, I used Nancy’s plain probiotic yogurt. This is what makes them FLUFFY. { for dairy-free use nut-based yogurt}

 

  • Onion. They are in every meatball I make!

 

  • An egg for the glue.

 

  • Flour or breadcrumbs of choice. I love using Chickpea flour for this part. This binds everything together, not to mention the extra protein from the chickpea flour.

 

  • If you love extra spice, add an extra jalapeño or Serrano pepper in there for good measure.

 

This recipe can be super customizable too, depending on what you have on hand.

 

You can sub the buffalo meat for turkey, crema for hot sauce, yogurt for sour cream, flour for breadcrumbs or chopped nuts. You can’t go wrong with this formula for the meatballs, so free free to make these your own!

I like to use gloves when mixing everything evenly together.;;Roll into balls and place on a baking sheet lined with parchment paper.;;Bake on 400 degrees for 12-15 minutes.
